Asian-Style Baby Back Ribs
Pork ribs are one meal item that provide a lot of versatility and are always a crowd pleaser whether you are Dutch oven cooking or firing up the grill. A bit of experimentation with asian spices led to this new Dutch oven recipe. With a nice blend of heat and sweet, our Asian-Style BBQ Ribs make for a fine main dish!
Ingredients:
2½ lbs baby back pork ribs
1 onion sliced
1 cup orange marmalade
½ cup barbecue sauce (not a flavored variety)
¼ cup gluten free Tamari Sauce
¼ cup cocktail sauce or 1 tsp. grated horseradish
1 Tbs. Dijon mustard
3 cloves garlic chopped
½ tsp. ground ginger
½ tsp. cayenne pepper (or to taste)
½ tsp. ground black pepper
2 Tbs. Olive oil
1 tsp. Toasted sesame seed oil
Directions:
Start by cutting your ribs into 4 even sized pieces then set them aside. Heat the olive and sesame seed oils in a pre-heated 10" Dutch oven then add in the onion slices and cook them for 3 minutes. Next, place the ribs meat side down into your Dutch oven and and cook for approximately 3 to 5 minutes until the ribs are golden brown. In a bowl, add the remaining ingredients and mix well to make your BBQ sauce. Add the sauce to your Dutch oven making sure ribs are coated on all sides. Bake at 350° for 2 hours or until fork tender.
For outdoor cooking use 20 charcoal briquettes placing 13 on top of and 7 beneath your Dutch oven. Replace your coals every 30 to 40 minutes in order to maintain heat. Remember that you may need to use more coals on cold or windy days.
