Bacon-Blanketed Meat Loaf
Here is a great recipe to use when cooking for a group. Meat loaf has always been a great comfort food but when cooked outdoors in a Dutch oven and kicked up with a blanket of bacon it will certainly impress your diners. Whether cooked indoors at home or at camp, our Dutch oven Bacon-Blanketed Meat Loaf is sure to please.
Ingredients:
10 Lbs Ground Chuck
2 Pkg. Bacon, thick cut
8 eggs
2 cups milk
8 cups bread crumbs
6 onions
6 green bell peppers
6 cloves garlic, minced
3 tbs. Chili powder
3 tbs. thyme
½ tbs. Kosher salt
½ tbs. pepper
Glaze:
3 cups water
1/3 cup Honey
1 cup Brown Sugar
2 6 oz cans Tomato Paste
8 tbs. Garlic powder
1/3 cup Worcestershire sauce
Directions:
Dice peppers and onions. Combine eggs, milk, bread crumbs and spices in a bowl. Using two large bowls combine your ground chuck with the peppers and onions, add half of the milk mixture into each bowl and mix ingredients until well blended. Do not mix it to the point where the ground beef loses its texture. Form the mixture into two loafs and cover the meat loafs with bacon using a basket weave. The basket weave helps hold the bacon to the meat loaf and it looks good too! Place racks or trivets into pre-heated deep 14" Dutch ovens, put a piece of parchment paper onto the racks and place a meat loaf onto each rack. If you don't have deep 14" Dutch ovens simply form multiple meat loafs and use smaller ovens. Cover your Dutch ovens and bake at 325°. If cooking outdoors use 26 charcoal briquettes with 13 on the lid and 13 beneath your Dutch oven.
While the Meat loafs are baking, combine the glaze ingredients in a sauce pan and cook until it begins to bubble then brush the glaze onto the meat loaves. Continue baking for about 45 minutes or until the meat loafs have an internal temperature of 150°.
