Beef Barley Rice Bake

 

Our Beef Barley Rice Bake is a great one pot Dutch oven meal that is not only good for re-fueling while out camping but is a great indoor Dutch oven recipe for your family to enjoy at home too. Give this one a try, I bet one plate full won't be enough!

Ingredients:

1 lb. ground beef
1 cup chopped onions
1 cup chopped celery
1 cup chopped green pepperBeef Barley Rice Bake serving photo
8oz. sliced mushrooms
½ cup frozen corn
½ cup frozen peas
½ cup barley-rinsed
½ cup rice-rinsed
1 28oz can diced tomatoes
2 ½ cups beef broth
2 Tbls. Tomato paste
2 tsp. minced garlic
1 tsp marjoram
2 ½  tsp salt
½ tsp ground pepper
½ tsp red pepper flakes
2 bay leaves
1 jalapeño chopped (optional)
Shredded cheddar cheese.

 

Directions:

In a 12" Dutch oven brown the ground beef, onions and celery. Add green pepper, mushrooms, corn, peas, barley and rice. Mix well and cook for 3 minutes. Add the remaining ingredients, mix well and cook for 3 minutes. Place lid on and cook at 350° for 1¼ hours. Add extra beef both or water if mixture appears to be drying out. Top with shredded cheddar cheese.

If cooking outdoors, use 24 charcoal briquettes placing 15 lit charcoal briquettes on top of and 9 beneath your dutch oven. Refresh your coals after 30 to 45 minutes.
