Beef Goulash
Beef Goulash is an old time recipe that originated in Hungry and spread throughout Central Europe. Brought to our country by immigrants, this comfort food pleases young and old alike. Adapted for Dutch oven cooking and easy to prepare, this filling dish will provide warm comfort on cool nights.
Ingredients:
2 lbs. lean beef round
2 tbs. unsalted butter
2 onions, chopped
2 tomatoes pealed and chopped
1½ tsp. salt
¼ tsp. black pepper
1 garlic clove, minced
1/8 tsp. paprika
1 bay leaf
2 cups beef broth
2 tbs. flour
¼ cup red wine
Directions:
Melt butter in a preheated Dutch oven. Add the beef to your Dutch oven and brown it on all sides. Next, add the onions and sauté until onions are tender. Add in the tomatoes and spices then stir the beef broth into mixture. Cover and cook over low heat, 300°, for 1 hour until the beef is tender.
Combine ¼ cup of beef juices with flour, stir until smooth and stir into the goulash, cook uncovered until sauce thickens. Serve over dumplings or spatzle.
Use 20 charcoal briquettes for the outdoor cooking of this recipe with charcoal as your fuel. Place 10 lit briquettes on top and 10 underneath your Dutch oven. Replace your coals about every 30-40 minutes. You may need more coals in windy or cold weather. This recipe also works well if you hang your Dutch oven from a tripod over a low fire.
