Beefy Mac
Beefy Mac is one comfort food that lends itself very well to the Dutch oven. Easy to prepare, this is a great pasta dish for teaching aspiring young chefs the art of Dutch oven cooking. It also provides the foundation of a great Dutch oven meal at camp ar at home.
Ingredients:
1 lb. uncooked penne pasta
1 lb. Ground beef
8 oz. shreaded mazzerella
1 32 oz. jar, spaghetti sauce
1 cup water
1 15 oz. can, diced tomatoes
2 - 4 cloves of garlic
1 medium onion
1 medium green pepper
12 oz fresh mushrooms
1 tbs. oregano
1 tbs. basil
salt and pepper to taste
Directions:
Prepare vegetables by dicing the onion, green pepper and garlic. Wash and slice the mushrooms. Brown the ground beef in your dutch oven, drain off the fat. Add in the vegetables along with the oregano and basil. Stir in the diced tomatoes including the liquid. Pour tomato sauce into the mix, rinse out the jar with the water and add to the mix. Stir in the uncooked pasta and top it off with the cheese.
Bake at 350° for about an hour. Use 25 charcoal briquettes if cooking outdoors using charcoal. Place 15 lit briquettes on top and 10 underneath your Dutch oven. Replace your coals about every 30-40 minutes. You may need more coals in windy or cold weather. The liquid in the mixture will cook the pasta.
Serve with salad and fresh baked bread for a balanced Dutch oven dinner.
