Gluten Free Chili Hash
When Dutch oven cooking for groups it is important to take into account any dietary restrictions members of the group may have. I have been noticing that people who need to maintain gluten free diets, both adults and youth, are becoming more and more common. Our Gluten Free Chili Hash is an easy to prepare one pot meal that will please all members of your group or family. This recipe is designed for four but you can always double the recipe and use a 12" Dutch oven for a larger group.
Ingredients:
1 lb. lean ground beef
1 medium onion chopped
2 cloves garlic chopped
4 small potatoes cubed (approx. 1 lb.)
½ cup chopped green pepper
1 cup frozen peas
1 cup low sodium beef broth
½ tsp. salt
½ tsp. ground black pepper
2 cans (16oz) Bush’s Chili Beans – Medium Sauce
Red pepper flakes or jalapeños to taste - optional
Directions:
Preheat your 10" Dutch oven by placing it over 20 charcoal briquettes. Place the ground beef and chopped onions into the warmed Dutch oven and cook until the beef is browned and the onions are translucent. Add in the chopped garlic, the green pepper and the peas then cook for 2-3 minutes. Add in the potatoes and cook for another 2-3 minutes. Season with salt and pepper then add beef both and chili beans. Stir well.
Cover and bake for 45 minutes at 350° or until potatoes are fork tender. For outdoor cooking use 20 charcoal briquettes placing 13 on top and 7 beneath your 10" Dutch oven. You may need more briquettes in windy or cold weather.
Before serving, top with shredded cheddar cheese, sour cream or crumbled bacon if desired. This is a gluten free recipe.
