Choc-o-Cherry Coconut Dump Cake
Here is a new version of the old stand-by Chocolate and Cherry dump cake that is sure to satisfy your sweet tooth. Pecans, coconut and frosting really really kick up this Dutch oven dessert.
Ingredients:
1 box of a good German Chocolate Cake Mix
3 eggs
1 cup water
½ cup vegetable oil
½ can Milk Chocolate Frosting
1 cup chopped Pecans
1 cup unsweetened coconut flakes plus ½ cup to sprinkle on finished cake
1 21oz can Cherry Pie filling
Parchment paper
Directions:
Line a 10 inch Dutch oven with parchment paper. Evenly sprinkle pecans and then coconut flakes into the bottom of the Dutch oven. Place frosting mix by the teaspoon full, starting in the middle around the bottom but at least 2 inches from side of the Dutch oven . Next, evenly spread the cherry pie filling over the frosting. In a separate bowl, mix cake mix, eggs, water and vegetable oil by hand until smooth. Pour batter over top of cherry layer. Cover and bake at 350 degrees for 45-50 minutes or until cake portion of layer done. Test with a toothpick, if it comes out dry it’s done. If you insert toothpick too far it will hit topping mixture.
Options for serving: Leave in the Dutch oven and spoon out to serve or carefully turn over onto a plate and pull off parchment paper. Center of cake will be very moist. Sprinkle the remaining ½ cup of coconut flakes over top of cake. Serve with vanilla ice cream or whipped topping.Serves 8 - 10
