Dutch Oven Frittata
Here is a tasty egg dish that takes the classic Italian Frittata and combines it with a crust that would typically be used when preparing quiche. Tasty and filling, our Dutch Oven Frittata is great for any meal!
Ingredients:
1 Pre-made pie crust
10 Eggs scrambled
1 cup shredded Mozzarella cheese
½ cup shredded Swiss cheese
2 Tbs. grated Parmesan cheese
½ tsp. garlic powder
½ tsp. basil
½ tsp. oregano
½ tsp. ground black pepper
8 oz. cubed ham
½ cup finely chopped onion
½ cup finely chopped green pepper
½ cup finely chopped red pepper
1 cup fresh spinach chopped
½ cup broccoli florets chopped
Olive oil
Optional: jalapeño pepper
Directions:
Line a 10 inch with Oven with parchment paper. Place the pre-made pie crust on bottom making sure that there is at least 3 inches of dough going up the side. Prick crust with fork several times, cover and bake at 350° for 10 minutes or until crust golden brown.
Using a skillet while the pie crust is browning, heat the olive oil. Cook the ham, onions, green and red peppers, spinach, broccoli florets, and jalapeño (optional) for about 10 minutes or until vegetables are soft. Remove from the heat to cool.
In a large bowl, whisk the eggs then stir in the cheeses and herbs. Add the vegetables to the egg mixture and stir well. Pour carefully into the pastry lined Dutch oven, cover and bake for 30 minutes at 350º or until a knife placed in the center comes out clean. Do not over bake.
