Glazed Carrots

 

Here is a recipe that, due to its simplicity, is good when cooking for large groups. It is also easy to scale down for a family sized side dish. Experiment with this one by adding other ingredients such as frozen peas and/or corn. You can also sprinkle with crisp bacon before serving.

Ingredients:Photo of Glazed Carrots

4 lbs. Baby carrots
2 cups butter
2 cups brown sugar
2 cups water
¼ tsp salt
¼ tsp Ground black pepper

Options:

Crisp bacon
Frozen peas

Directions:

Melt two cups of butter in a 12" Dutch oven. Mix in the water, the brown sugar, salt and pepper, stirring until sugar has melted and the resulting sauce is blended and smooth. Slice the baby carrots in half length-wise and place them into the Dutch oven, stirring them until coated with the sauce. Cover your Dutch oven and cook at 325° using 9 charcoal briquetted beneath and 15 on top of your Dutch oven. Cook for 30 minutes or until the carrots have softened.

Serves 16 (4oz servings)
