Swiss Steak Dinner

 

Hearty and wholesome, this one pot dinner is an old time classic. Enjoy it with a side of cornbread or with a Corn Soufle!

Ingredients:

Sweet-n-Sour Beef and Cabbage

1 ½ lb. round steak, ¾” thick
Flour for dredging steak (cornstarch or tapioca flour for Gluten Free version)
1-2 tsp. salt or to taste
½ tsp. black pepper or to taste
¼ - ½ tsp. garlic powder
Olive oil
1 medium onion, sliced
4 carrots, chopped
2 ribs celery, chopped
½ green pepper, chopped (optional)
1 14oz. can diced tomatoes
1 cup low sodium beef broth
12 petite Klondike, Yukon or Red gourmet potatoes

Directions:

Combine flour, salt, pepper, and garlic powder. Using a meat tenderizing hammer pound the flour and spice mixture into the round steak, working the meat until it is ½" thick. Using a pre-heated 12" Dutch oven, brown the tenderized steak in olive oil. Add the remaining ingredients, cover and bake for 1 hour (or until potatoes are soft).

If cooking at home in your oven, bake at 350°. For camp or outdoor cooking use 24 charcoal briquettes. Place 15 lit coals on top of and 9 lit coals beneath your oven. You may need to replace your coals with fresh briquettes after 30 minutes.
