Pineapple Upside Down Cake
Here is a classic dessert recipe that is easy to adapt for Dutch oven cooking. Pineapple Upside Down Cake is sure to be a favorite as a dessert or for an outstanding evening snack.
Ingredients:
1 20oz can sliced pineapple
1 small jar maraschino cherries
1 18oz box pineapple cake mix
1 can lemon lime soda
Directions:
Start by placing a round of parchment paper into the bottom of a 12" Dutch oven. This will ensure that you won't have any problem with your cake sticking when you invert your oven to remove the cake. Evenly spread the pineapple slices into the bottom of the Dutch oven. Place a cherry into the center of each pineapple slice. Combine the cake mix with the can of soda and stir to make a smooth batter. Pour the batter evenly over the pineapple in your Dutch oven. Cover the Dutch oven and bake at 350° for 30-45 minutes or until a toothpick can be inserted into the cake and removed clean. Use 24 charcoal briquettes for the outdoor cooking of this recipe with charcoal as your fuel. Place 15 lit briquettes on top and 9 underneath your Dutch oven. Replace your coals about every 30-40 minutes. You may need more coals in windy or cold weather.
Be sure to brush the ash off of the Dutch oven then remove the lid and replace it with a serving plate. Turn the oven over so that the cake falls onto the serving plate and serve.
