Wayne's Hungarian Goulash

Wayne's Hungarian Goulash is a recipe for Dutch oven cooking that is sure to please. Hearty and wholesome, give this one a try with a side of Dutch oven cornbread.

Prep time: 30 Minutes, Cook time: 50 Minutes

Ingredients:

2 Tbs. Olive Oil
1 Lb. Lean Ground Beef
1/2 tsp. Liquid Smoke
1 Large Yellow onion (Diced)
Wayne's Hungarian Goulash1 Medium Green Bell Pepper (Diced)
1 Medium Yellow Bell Pepper (Diced)
1 Red or Orange Bell Pepper (Diced)
2 cloves Garlic (Minced)
1 1/2 cups frozen whole kernel corn
1 cup fresh mushrooms (sliced)
1/2 cup olives (sliced & drained)
2 cans Tomato Soup (14 oz each)
2 1/2 soup cans Hot water
3 Tsp. Paprika
1/2 tsp. cayenne pepper
2 tsp salt
12 oz. bag pasta shells
3 cups grated cheddar cheese

Directions:

Brown ground beef using olive oil in a 12" Dutch oven using 20-22 briquettes bottom heat. When beef has browned add onion, mushrooms, bell peppers, Liquid Smoke, and garlic. Saute until vegetables are tender. Add corn, olives, tomato soup, hot water, paprika, cayenne pepper, and salt. Stir to mix well. Bring all ingredients to a boil then stir in pasta shells.

Place lid on Dutch oven and bake using 10-12 briquettes bottom and 14-16 briquettes top heat for 40 minutes. Sprinkle grated cheddar cheese over top and bake for 10 minutes more until the cheese is melted.

This Dutch oven recipe serves 8, a good Boy Scout patrol size.
